Freezer Cooking Session: Bulk Produce

A while back we bought 30 pounds of onions, diced them up and froze them in snack size zip top bags. We had never froze onions so it was an adventure that lead us to freezing a variety of other diced or sliced produce – red chilies, bell peppers, potatoes, green chilies, just to name a few.

Four months later we finally used the last bag of onions and decided it was certainly worth the few hours of prep time to always have onions on hand so we picked up a 50 pound sack of onions – enough to last us about 6 months.

But we switched it up after we started and decided to try out the slicing feature on our KitchenAid food processor. After a little trial and error, we got great slices and now have a variety of diced and sliced onion bags to use. I’m excited about using the slicing disc to make fried zucchini soon.

The only thing we’ve noticed is they tend to be a little watery but it doesn’t change the taste. I’ve never tried green onions but next time I see a sale, I’ll have to do try it.
