Easy Lemon Chicken

We’ve been using the same ol’ lemon chicken recipe but knew it could be improved so we set out to try some new recipes. After a few test batches of other recipes, we found and modified this recipe over from Rasa Malaysia. For speed, we used a bag of Schwan’s chicken bites and it was amazing! We’ve already had it a few times, and it’s just as tasty when reheated the next day.

Easy Lemon Chicken

If you love orange chicken, you will adore this easy lemon chicken version. We also simplified it by using prepared chicken bites so you can make this any day of the week.

Ingredients
  

  • 2.25 pound chicken bites We use Schwan’s

Sauce

  • 1/2 cup lemon juice plus
  • 1 tablespoon lemon juice
  • 1/2 cup sugar start with 1/4 cup and add to taste
  • 3/4 cup water plus
  • 3 tablespoons water
  • 1 tablespoon cornstarch
  • 6 drop yellow food coloring optional
  • Pinch of salt to taste

Instructions
 

  • Prepare chicken bites. We use our trusted deep fryer.
  • Combine sauce ingredients in a medium skillet.
  • Bring to a boil over high heat.
  • Add cooked chicken bites to skillet and stir to coat.
  • Serve with chow mein, steamed rice, or your favorite veggie.
