Several years ago, we went to a local restaurant and placed our normal order for fried zucchini. The manager came out to apologize that they were out of zucchini and were not planning on keeping the item on the menu any longer. The manager could tell we were quite upset and offered to make a special appetizer of fried yellow squash – the vegetable of the day. We reluctantly accepted the offer. Boy were we thrilled when the fried yellow squash was just as tasty as fried zucchini.
Tomorrow we’ll share the batter recipe that has been handed down for generations in my family. With a few ingredients, you can have fried zucchini, fried squash, or even chicken nuggets.
